Nutmeg trees usually stand in the shade of clove trees in Zanzibar’s opulently green spice gardens. By the time the fruits split, they are ready to harvest. Inside the fruit we find the nut in its shell. Around the shell is the mace, which can also be used for cooking. As an aroma carrier, the essential oil contained in the fresh nuts gives the Zanzibar nutmeg its unique sweet, nutty taste.
