Cinnamon is one of the most important spices in the Swahili kitchen and gives the local meat and fish dishes their exotic touch. Because of this, in Zanzibar only high-quality and healthy Ceylon cinnamon trees are planted. In bloom, the Ceylon-Cinnamon trees unfold their aromatic smell deep in the forests of Pemba. The harvesting of cinnamon remains a task of diligent craftsmanship to this day: The farmers separate the outer bark of the cinnamon tree by hand. The thin layer of cinnamon is located between the outer bark of the tree and the wood. The so-called cinnamon bark then gets sun dried and rolled into cinnamon quills over the course of a week.
